Flavours of the sea straight to the table with homemade Portuguese sardines in a can

Various gastronomic proposals, either directly from the can as a starter or as a main course, with the NURI sardine always the protagonist



Pinhais, a centenary cannery in Matosinhos and home of NURI, a cult brand in international markets, launches "The great sardine recipe book NURI", a book full of stories and dishes about this species so appreciated by the Portuguese. With a range of diversified and sophisticated gastronomic proposals that evoke flavours of the sea, the book presents various suggestions of recipes made with NURI preserves, from tapas, salads, quiches, to spicy pastas, must-try delicacies that promise to conquer the palate of the Portuguese.

Originating on the Atlantic coast, the sardines arrive fresh at the historic Pinhais cannery and are then brined to balance their flavour. It is then cut by hand and steamed in a century-old oven, a traditional process that keeps the nutrients, vitamins and mineral salts present. Once cooked, the fish is ready to enter the tins, to which excellent ingredients are added, such as olive oil, cucumber, chilli pepper, carrot, cloves, black pepper and bay leaf. This is followed by canning, sterilization and maturation of the NURI conserves. The entire sardine journey, which involves around 12 stages, is entirely manual, which guarantees the recognised quality of the brand's products.

"Each tin of Nuri is a piece of living tradition, a production process that has remained tenaciously unchanged for 100 years, in the same factory, on the same marble tables, the same recipe day after day," says Jakob Glatz, head of the Glatz company that owns the NURI brand.

Written by Anna Burghardt and developed by professional chef Andres Stirn, the numerous NURI recipes in the book are complemented by moving stories about daily life at the Pinhais factory, the long-lasting relationships that mark the company's journey and the different generations of the same family that work there. It is a plunge into the bustle of the Matosinhos fish market, where Pinhais employees expertly select only the best sardines. It is also the history of the brand which is based on a cultural heritage of the typically Portuguese centenary industry, now portrayed in each of the NURI recipes, to be discovered in the book.

Published in three languages: Portuguese, English and German, "O grande livro de receitas desardinhas NURI" will be on sale at the end of the month and can be purchased at Museu-Vivo" Conservas Pinhais Factory Tour" and also at Pinhais' online shop, for 35 euros each.
